Glaschu, one of Glasgow’s premier fine dining spots, will collaborate with renowned chef Brian Maule for a special two-night event on 7th and 8th May.
The five-course tasting menu will blend Maule’s French influence with Glaschu’s commitment to top Scottish ingredients. Dishes include Spiced Crab with lobster and crab apple jelly, Roast Scotch Sirloin with spring vegetables, and Poached Rhubarb with créme chantilly.
Brian Maule, former head chef of Michelin-starred Le Gavroche and owner of the now-closed Brian Maule at Chardon d’Or, has crafted this menu with Glaschu’s head chef, Graeme Brown, to highlight premium spring produce and some of Maule’s signature dishes. A curated wine pairing by Enotria & Coe, featuring a 2023 Viognier Roussanne and 2014 Haut-Médoc, will complement each course, with a glass of Moët & Chandon Champagne on arrival.
The event, priced at £95 per person, includes the five-course tasting menu, wine pairings, and a glass of Moët & Chandon Champagne.

Glaschu, located in Glasgow’s Royal Exchange Square, offers modern Scottish fine dining and prides itself on using locally sourced produce, including fresh fish and meat from family-owned suppliers. Head Chef Graeme Brown added:
